How it's made
Three steps,
one mould.
Thekua was never meant to be quick. It's the sweet families in Bihar and Jharkhand hand-make for Chhath Puja, pressed one piece at a time into moulds carved by hand — sometimes passed down for generations. We still make it exactly that way, just at a scale you can order from.
STEP 01
Mix
Whole wheat flour is worked with warm jaggery syrup and hot ghee — no water, no eggs — until the dough holds together like short pastry.
STEP 02
Stamp
Small portions are pressed into hand-carved wooden moulds. Every mould leaves its own pattern behind — that's the part a machine can't do.
STEP 03
Fry
Slow-fried in ghee on a low flame until the outside turns a deep, cracked gold. That slow fry is what gives thekua its bite and its long shelf life.

What we don't compromise on
Old process, on purpose.

Ghee, not refined vanaspati
We fry in ghee, on a low flame, the way it's done at home — it's slower, and it's why the thekua keeps.

Jaggery, sourced from Bihar
No refined sugar. The jaggery is what gives thekua its colour and its edge of caramel.

Hand-stamped, not machine-cut
Every piece goes through a carved wooden mould by hand. The pattern is never perfectly even — that's how you know.

Fried and packed the same day
No preservatives — the long shelf life comes from the slow fry, not from anything added after.
